Age Matters vs Cask Matters

A Masterclass hosted by Peter Klas of Scotia Spirit, Cologne What makes a good whisky? The age of the whisky or the cask that the whisky has matured in? At the beginnig of the new century the industry told us that "the age matters" because of overloaded warehouses after the downturn in the ninties. Nowadays, a lot of older whiskies have disappeared yet the demand is higher than ever. More and more younger or non-age statement whiskies are on the market and now the industry tells us "the cask matters", but which is it? Is age the only indicator of a good whisky? What about younger whiskies that spend their lives in excellent casks? Lets find out with an entertaining blind tasting! Sample 6 pairs of Speyside's finest whiskies (each 10ml, total 12 x 10ml). Nose them, taste them and compare them. The final step is choosing your favourite and you might be surprised when we reveal what the samples are...

Craigellachie Distillery Tour

You can write the story of a distillery and talk of naught but business, machines, technical details and statistics. It will be a true tale, but it won’t be the whole tale. Craigellachie’s story is about more than whisky.” Dave Broom, Craigellachie: The Romantic and the Pragmatic Founded in 1891 by Peter Mackie of White Horse and Alexander Edward – who also built the Craigellachie hotel alongside – Craigellachie distillery stands proud in the heart of Speyside. But don’t be fooled into thinking this is your typical Speyside dram: Craigellachie is muscular and robust – a result of carefully calibrated production process and the use of traditional worm tub condensers. Usually closed to the public, this Spirit of Speyside Festival we invite you to join us for a behind the scenes tour of this famed, unusually stubborn distillery, naturally, with a dram (or two) along the way. Let us tell you a tale or two about this legendary distillery.

Here at the Dowans, we have been pairing food successfully with whisky since our arrival here in 2012 believing that the unique combination is one of mastery; equal to that of food and wine, an already established concept. Continuing this celebration, we are delighted to be working with two stalwarts of the industry: Ann Miller and Martine Nouet who, combining their decades’ worth of experience in the industry, have both, in their own way, been pioneers of the pairing of whisky and food. Join us on the evening of the 6th of November for 4 courses that have been lovingly curated by Martine and our kitchen team paired alongside 4 outstanding drams (and maybe a surprise here or there!) which both Ann and Martine will delight in detailing, discussing and sharing with you, our guests. *Please let us know of any dietary restrictions at the time of your reservation so that these can be easily accommodated in advance. We cannot guarantee that any special requests can be met on the night. Ann Miller, the Dram Queen, an independent whisky expert, worked in the industry for over 30 years. A Keeper of the Quaich and a lifetime Ambassador for the Festival, she now offers bespoke experiences including tutored tastings, whisky dinners and training courses for novices and enthusiasts. She shares her passion, knowledge and behind the scenes expertise with clients. With abusiness partner, Ann has created The Spirits Club Academy offering online opportunities to learn about Scotch whisky. French born author and journalist, based on Islay, Martine Nouet writes exclusively about food and spirits. She is the pioneer of matching food and whisky. In 2016 she published the well-acclaimed recipe book "à table, whisky from glass to plate" which reflects her original contribution to whisky which she also pairs with art, dance, and music at events around the world. Discover Speyside's Story Tasting 1

Smugglers' trails, the river Spey and the railways were all important to the success of Speyside's single malts. Join Ann Miller, the Dram Queen, to discover more about these themes during tutored tastings bringing each to life with a selection of drams which illustrate the rich variety of whiskies from Speyside. The pioneers of Speyside whisky industry were illicit distillers scattered over the remote glens, crofts and farms of Speyside who had to conceal their activities from the prying eyes of the authorities. Once their spirit was ready, they would set off along hidden trails in the dead of night to smuggle it to their customers. Ann will share stories of these pioneering men and women who established many of today’s successful single malt distilleries as she presents a selection of drams they created. This event will take place in the Dram Queen's exclusive tasting room. With a maximum of 12 guests, current guidance on Covid precautions will be observed. After 1823, it was possible to distil legally and no longer necessary to hide in the hills so legal distilleries were established close to the towns and villages of Speyside. Octave Tasting 2 with Duncan Taylor

Innovators of maturation in Octave casks, Duncan Taylor Scotch Whisky has decades of experience in the art. Enhancing the process by a second maturation in an octave cask, which is approximately 1/8th the size of a butt, enhances the process of giving each whisky more depth of flavour. The ratio of surface area of wood to volume to liquid is higher and in turn, adds a dimension, bringing out the best of each dram. In this tasting set, the team at Duncan Taylor will be including Octaves as well as Premium Octaves to showcase some of the best whiskies in their portfolio.

Two Sides of Speyside

Join Global Brand Ambassador Matthew Cordiner and Distillery Brand Ambassador Gary Ross for a ‘Two Sides of Speyside’ tasting, featuring some very tasty drams from John Dewar & Son’s two Speyside distilleries; Aultmore & Craigellachie. This tasting will show you two very different sides to Speyside whiskies as Aultmore is considered by many as a perfect example of the Speyside ‘style’; light, floral and fragrant. Craigellachie, on the other hand, does not conform to this regional ‘style’; powerful, muscular, and robust, thanks to its use of worm tubs and other old fashioned techniques. As well as a deep dive in to the history of these two distilleries, the session will also be paying tribute to unsung whisky hero Alexander Edward, founder of both distilleries and the Craigellachie Hotel. It’s sure to be a great session.

What's Johnnie's story? How was illicit whisky made in the Clock Tower when the town was full of Excise Men? Visit the 566AD church where the Celtic Monks first distilled 'whisky'. Then a short walk to Mortlach Kirk to see where the Celtic Monks first distilled in 566AD.  We visit the Kirk, William Grant and the Cowie graves, the grave-robbers watchers hut, and hear about the legendary battle in the 11th Century. What was dirty about dramming?  The unique 2.81 distillation We will stop at the historic kiln of Mortlach Distillery; see the dunnage warehouses and traditional wormtubs whilst sipping on a fine dram of Mortlach Flora and Fauna - the stillman's legendary favourite. How did the Pagoda come about?   How did the Grant the Coppersmith help the smuggling trade - the illicit dog? Measure whisky like the Exciseman Finally you will hear about the role of the Mortlach Excise Man and will have a go using some of his original instruments to measure the strength/volume of alcohol.   You can try this for yourself. Lots more besides. The easy walk is just over a mile long.  Offered by Alistair as a qualified walking guide.   Drams are approximately 12.5ml. 9 drams and an aqua vitae ·        'Wee Witchie' 12YO ·        JW Blue Label Ghost and Rare Port Ellen ·        G&M 21YO ·        Aqua Vitae of the Celtic Monks ·        G&M Reserve 1998 12YO ·        Game of Thrones 15YO ·        Cowie's 'Blue Seal' 20YO ·        Flora and Fauna 16YO ·        Cadenhead's Small Batch 1994 20YO ·        G&M 1984 30YO
